🥘three Tyson grilled and prepared rooster breasts microwaved and diced (any pulled rooster works too or omit for a vegetarian meal!)
🌮1/2c frozen corn
🥘1 c drained and rinsed black beans
🌮6 sliced inexperienced onions
🥘1/4c diced jar jalapeño (contemporary can be good too)
🌮1/2c salsa (or attempt enchilada sauce)
🥘1 can of rotel (tomatoes with greeen chiles)
🌮Taco Bell sauce
🥘Minced garlic
🥘Chili powder
🥘contemporary cilantro and diced cherry tomatoes
🥘Preheat oven to 375° F.
🔥In a big oven protected skillet, warmth skillet sprayed with cooking spray over medium-high warmth. When the skillet is scorching add within the diced inexperienced onion and diced jalapeño. Sauté for two minutes then add within the drained/rinsed black beans, corn (I put it in frozen!), diced or shredded rooster, can of undrained Rotel, 1/2tsp chili powder, half tsp cumin, 2 Tbsp minced garlic and 1 Tbsp garlic powder. Season with salt and pepper and stir collectively till mixed. Prepare dinner down till juices are gone.
🔥Add within the spaghetti squash strands, 1/2c chunky salsa, 1/4c of Taco Bell sauce and stir collectively till mixed after which prime with the 1/2c of sunshine shredded cheese. I used Mild Mexican mix from Dealer Joe’s. (I don’t advocate fats free cheese for this, icky!)
🔥Bake for 15 minutes or till the cheese is melted. Prime with chopped tomatoes, cilantro and extra inexperienced onions if desired.
