Eggless cranberry orange muffins🧁

2 Cups all goal flour
1 & ½ Tsp baking powder
1 Tsp baking soda
1 Tsp salt
¾ Cup Castor Sugar
½ Cup thick, plain or Greek yogurt
½ Cup olive or refined oil
1 Tsp pure vanilla extract
1/Three Cup milk
¼ Cup recent orange juice
orange zest from 1 orange
1 & ½ Cup dried cranberries
1 cup chopped white chocolate
half cup recent cream
💟Soak dried cranberries for 10 min in sizzling water. Pressure the water. Chop them roughly & preserve apart.
Grease the muffin tins or line them with cupcake liner & preserve apart. Sieve APF, baking pwd, baking soda and salt collectively, combine nicely & preserve apart.
In a bowl whisk yogurt, sugar and oil collectively till nicely mixed. Add orange juice, orange zest & vanilla. Combine nicely.
💟Add the dry elements spoon by spoon & the milk regularly. Combine till nicely mixed. Fold in cranberries, mix gently. Don’t over combine.
Spoon this batter to muffin tin upto 3/four th peak. Bake within the preheated oven at 180 deg for 16-18 min, or till the toothpick comes out clear. Place onto the rack to chill it down.
💟Take white chocolate in a bowl, add recent cream & warmth for 30 Sec twice in a microwave and blend with spatula between every heating interval. Combine till clean & nicely mixed.
Fill an icing bag, preserve in fridge for 15 min.
Make spirals or costume the muffins with ganache as desired, as soon as they’re cool sufficient.
